Chewy Peanut Butter Chocolate Chip Cookies (Grain and Dairy-Free)
If you’re searching for a “guilt-free” sweet-tooth killer, then this is your recipe.
You can have it all. Including fresh baked grain and dairy-free cookies.
No flavor has been sacrificed here, this recipe is delicious.
These cookies are a source of good fats and energy and they’re sweetened with agave nectar, which is lower on the glycemic index than processed sugar. This means they won’t cause the same “spike and crash” in blood sugar as processed white or brown sugar.
1 Cup Natural Peanut Butter or Cashew Butter
½ Cup Agave Nectar
1-2 Tablespoons Coconut Flour
1 Whole Egg
½ Cup 100% Dark Chocolate Chips or Enjoy Life Semi-Sweet Chocolate Chips
Preheat oven to 350. Combine wet ingredients, and then add coconut flour and chocolate chips. Place batter in freezer for 10 minutes, and then put 1 to 1 ½ inch scoops of batter on an ungreased baking sheet.
Bake for 12-15 minutes.
Recipe yields 15-20 cookies.
